Support for SermonSpeaker 5.x is in bugfix mode only, the same as it is for Joomla 3.10.
I will not add any new features to this releases.
Please upgrade to SermonSpeaker 6.x and Joomla 4.x, which is better anyway.

I have used FileZilla to upload all of my sermon audio and video files and put the directory paths in OPTIONS.

When I try to create a sermon record, I assume a dropdown is supposed to happen that would let me select the file from the directory. But nothing is shown.

I am assuming I have not set something up correctly. Any thoughts or advice?

That's how it is supposed to work, yes.

The directory for the files must be within the Joomla folder. And the path must be entered into the options relativ to the Joomla root folder. Then the dropdown should show you the sermons.
