Support for SermonSpeaker 5.x is in bugfix mode only, the same as it is for Joomla 3.10.
I will not add any new features to this releases.
Please upgrade to SermonSpeaker 6.x and Joomla 4.x, which is better anyway.

I know I can restrict downloading through the configuration options but that would apply to all series. I want to be able to restrict only one particular series from being downloaded or if I have to the individual sermons.

In the setting of the individual series, you can also set if the series can be downloaded.
Please note that individual sermons always can be downloaded. You can't prevent this.
