Support for SermonSpeaker 5.x is in bugfix mode only, the same as it is for Joomla 3.10.
I will not add any new features to this releases.
Please upgrade to SermonSpeaker 6.x and Joomla 4.x, which is better anyway.

Is it possible to create playlist and play all sermons in module?
Or is it possible to play all sermons from a category or serie?

You can show a player in the series page, which will play the sermons from that series.
You can also have a player on a sermons list which will play the sermons from the selected category (and optionally its subcategories).
The player will always play the same sermons that are presented in the list.

The same is true for a module, where you can show sermons based on various filters.
