Support for SermonSpeaker 5.x is in bugfix mode only, the same as it is for Joomla 3.10.
I will not add any new features to this releases.
Please upgrade to SermonSpeaker 6.x and Joomla 4.x, which is better anyway.

Let's say all your sermons have audio, but for the sake of storage and bandwidth usage, you only keep video for the four most recent sermons. If you have SermonSpeaker configured for iTunes, does it provide iTunes with the URLs for audio files,, video files or both?

It will always only show one file. You can specify if it should only show audio or only video files. By default it will show the file based on availability and priority settings.

I don't see that option under SermonCast. Is that driven by the Priorty option under the Player option?

Yes, the priority is taken from there.
Personally, I wouldn't mix audio and video in the same podcast. Thus I would set the type to audio or video, the module as well as the menu item allows to specify the type.
You could then provide two feeds, one for audio and another for video.
