Support for SermonSpeaker 5.x is in bugfix mode only, the same as it is for Joomla 3.10.
I will not add any new features to this releases.
Please upgrade to SermonSpeaker 6.x and Joomla 4.x, which is better anyway.

The pop-up menu with the download and email options are not readable because the text is not visible. Is there some place to adjust the foreground and background text in the popup menus.

In your templates "bootstrap.css" file, there is the following rule which applies to that dropdown menu:

.btn-group {
    font-size: 0px;
}

Either remove that line or override it with another value for the fontsize. And the text will magically appear. Actually, it's already there, just so msall you can't see it
