Support for SermonSpeaker 5.x is in bugfix mode only, the same as it is for Joomla 3.10.
I will not add any new features to this releases.
Please upgrade to SermonSpeaker 6.x and Joomla 4.x, which is better anyway.

I tried to get a Podcast working, but I receive an error from iTunes.

There is some Google Analytics JavaScript code in the feed which breaks it.
This is usually done by buggy modules/plugins.
Try disabling the extension which adds the GA code and see if itm works then. If so, notify the extension developer that he should only add the code when the document type is HTML, otherwise he should return without doing anything.
If it's a plugin, you can also try to disable content preparing in the SermonSpeaker options -> SermonCast tab.
