Support for SermonSpeaker 5.x is in bugfix mode only, the same as it is for Joomla 3.10.
I will not add any new features to this releases.
Please upgrade to SermonSpeaker 6.x and Joomla 4.x, which is better anyway.

Getting files from an external server

We are setting up a new webpage for our church and wish to bring the old sermons over as well as keep on being able to get new ones from the external server the sermons are stored on.

The Extern script that is suggested, it makes a list of the files from the server, does it also detect when new files have been added and add those to the list? Or is there some other way to do that? Any tips?

It's a very simple script which generates an XML output for the files found within the same directory. So it's generated dynamcially and will detect new files as soon as they are added.
This XML output is then consumed by SermonSpeaker to populate a list of files in the sermon creation/edit form.

However you will have the best results with SermonSpeaker if the files are on the same server.
Then all features will work :)

So if you want to create a new webpage and the old one didn't use SermonSpeaker (or PreachIt), I would move all the existing sermon files to the new server. And then let SermonSpeaker create sermons from the files found in a given directory. It will do that based on the ID3 tags found in the files.
