Support for SermonSpeaker 5.x is in bugfix mode only, the same as it is for Joomla 3.10.
I will not add any new features to this releases.
Please upgrade to SermonSpeaker 6.x and Joomla 4.x, which is better anyway.

It looks like there is a little man serving as the default logo for a speaker. Is there also a female version?

Does this get assigned under Speaker -> Edit -> Details -> Picture?

You can assign a better matching picture at the place you mentioned. Best would obviously be a photo of the speaker, but you could also put a little woman there for female speakers.
There is also a setting in the SermonSpeaker options in the "Editing" tab to specifiy a default picture.

By default it should be a gender neutral "red crossed camera". I'm not sure where your little man is coming from
