Support for SermonSpeaker 4.x is canceled as it is for Joomla 2.5. I will gladly assist you with minor issues but I will not fix any bugs anymore in this releases.
The fix is to upgrade to SermonSpeaker 5.x and Joomla 3.x, which is better anyway.

Is there an easy way to set up 2 different feeds, I'd like to add one for the audio and a 2nd for the video for iTunes?

Either create two feed menu items or two sermoncast modules and set one to type audio and the other to type video.

when using the menu there seems to be only going back a week, is the setting somewhere I'm missing to show all the videos?

It always takes the feed length from the global Joomla configuration

I see the setting there for 100 items to display but no date specific to limit to 1 week, is it somewhere in there. The other feed displays all files

but not sure it matters iTunes doesn't seem to like a second feed submitted with the same address when the only difference is the end specifying video
