Support for SermonSpeaker 4.x is canceled as it is for Joomla 2.5. I will gladly assist you with minor issues but I will not fix any bugs anymore in this releases.

I had someone try to go to my sermon speaker series list then check out a video and the video wasn't centered like it does on my windows machine. Would there be any iPad settings I should check?

The issue is that Apple doesn't support Flash. The JW Player then has some fallback code included which will offer a HTML5 version of the player instead. I would have to check the formatting of those, I didn't really test how it looks.
Anyway the settings have to be done in the CSS, not in the iPad.

The CSS files for SermonSpeaker are located in /media/com_sermonspeaker/css/. Mainly the sermonspeaker.css is interesting. However this files will be overwritten if you install a new release of SermonSpeaker.
The better way would probably be to edit the CSS file from your template. This can sometimes be done in the administrator backend or by editing the files directly (usually in /templates/your-template/css/).
Unfortunately I don't own an Apple device and can't really test it myself but if you get a working solution I may include it into future versions of SermonSpeaker.
Also I'm not sure if the HTML5 fallback supports playlists. Probably not.
