I'm using the blog layout for the series list. How can I change it so that there are multiple columns and the most recent series is at the top? Is there a way to do this without creating a custom layout?

The blog layout doesn't support columns. You would have to create your own layout for that.

Ok, I think I can handle that. How about the ordering. I would like the most resent series first.

Ah sorry, forgot to answer that.
The series are shown in the order that is specified in the backend. For that, you go to the series manager and sort the table by the ordering column. Do that either by selecting it from the dropdown box or click on the little arrows at the beginning of the table header. Now you can just drag and drop the series into the desired order using the three dots at the left.
