Support for SermonSpeaker 5.x is in bugfix mode only, the same as it is for Joomla 3.10.
I will not add any new features to this releases.
Please upgrade to SermonSpeaker 6.x and Joomla 4.x, which is better anyway.

I have a category "All Sermons" as the parent
Within that category I have two sub categories: "Sunday Sermons," with two items, and "Bible Study," with 1 item
I want the parent "All Sermons" to register a total of 3 items. Is that possible?
ALSO
I have my menu for SermonSpeaker set to "Categories List." On that first landing page, is there a way to have the video player but not the audio player, but on the details page to have both?

To include items from subcategories, you need to enable that feature in the SermonSpeaker options. Go to the "Category" tab there and locate the "Include Subcategories" parameter. Set it to the preferred value (probably "All").
For the player you can set the priority to "Video", then it will show the videos by default. You can enable the "Audio/Video Toggle" to be able to switch between the two.
If you want to have two players, the layout needs to support that. I think the icon layout supports that, but the others don't. So you would have to create your own layout for that. See the documentation how it can be done.

That should work.
Make sure you don't have any caching active (Joomla or server).

It should work if you have the "Include Subcategories" set. All other settinsg don't matter.
Do the sermons even show if you navigate to the subcategories?
